Why do chefs in expensive restaurants not wear hair nets or some sort of culinary headgear?

Isn’t hair in food bad at any part of the price spectrum? Even more so if you shelled out a lot of dough? So how come so many long haired hipster celebrity chefs let their locks just flow freely in the kitchen?

    If the chef is actually preparing food, he will be wearing head covering, often a chefs hat or a hair net. This is a health department rule in every state. Those that runs the kitchen and orders the others what to do does not need to wear headgear. The chefs on TV is not serving to the public and therefore does not need to wear a hat. A possible reason why they don’t, other then it might not look good on TV, is that there is probably a mirror or a camera overhead and he might hit it with the hat. Other notes you should be aware of is that nobody will not touch their face or nose, they will use their shirt sleeve if they need to rub something. If they do, they will wash their hands.

    That’s a very good question. Of all the chefs I know personally, they are neat freaks. Clean and tidy. They wear their white chef hats. You couldn’t find a speck of dirt or hair on them with a magnifying glass. Their staff is required to wear hair nets. That’s the best I can do with this answer!

    Because most of the time the Chef you see in the front of the house is not preparing the food. They’ll come up with the recipes train there staff on how to prepare them and they do all the work. Im not saying all Chefs do this but it happens alot. Generally they oversee the operations. The line cooks usually do the bulk of the cooking.

    My brother is a chef, I have gone back into the kitchen to visit him and he has worked at 5 star restaurants and resorts. All of the people cooking the food either wear white chef hats or baseball style caps.

    Chef on TV do not wear hats because usually no one is going to eat the food that they make, it just for show and food was prepared separately for audience. Or they think since they are on TV they can do as they please. This is not the norm for real chef cooking in restaurants.

    Also, some restaurants require female chefs to have their hair pulled back at all times and the men to maintain a short almost buzz cut hair style.

    What makes you think they are NOT keeping their hair restrained. I’ve worked in very high-end restaurants where the chef & kitchen staff wear anything from the traditional tocque, to baseball caps, to bandanas, or even hairnets. I’ve never seen anyone remove their headgear except when away from cooking area giving a guest tour or in the dining room.
