 (I don&#039;t know where the recipe originated but it is similar to Mousakah-a Greek dish)

Mae Casterton&#039;s 
Eggplant Parmesan

It will take moree than 5 minutes, but I suggest  you make it the night before and have for a few days, if it lasts that long!  
You need one or two eggplants sliced in round circles
1 sm can of tomato paste(try the italian herb paste)
1 medium to large can of tomato sauce or puree
either works 
parmesan cheese or other
2 medium onions
10 crushed saltine crackers
ground turkey which you can cook in a fry pan, very little fat which you can discard.  I use it there is so little.
salt and pepper

Layer each ingredient in this order 
mix tomato stuff  first
Use a large 13&#039; casserole Makes 6 lg servings or 8 sm ones.  
tomato paste mixture 
cracker crumbs
1/2 cup
egglant 
s&amp;p
onion
turkey
s&amp;p
parmesan ch.
Make sure you cover with sauce completely at the end as it will dry out or burn.  A little EVOO
would be good as well. 
It will only take you 10 seconds to place it in a dish the next morning.
It does not fall apart and tastes better the second day.
