here are a couple of ideas..Baked Penne with Italian Sausage
* 1 (12 ounce) package dry penne pasta
    * 2 teaspoons olive oil
    * 1 pound mild Italian sausage
    * 1 cup chopped onion
    * 1/2 cup white wine
    * 1 (15 ounce) can tomato sauce
    * 1 (14.5 ounce) can diced tomatoes with garlic
    * 1 (6 ounce) can tomato paste
    * 2 cups shredded mozzarella cheese

Directions

   1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
   2. Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.
   3. Bake in preheated oven for 20 minutes, or until cheese is melted.

I got this one from another user...for the life of me I can't remember who, but as simple as it is, its pretty darn good
POOR MAN'S STROGANOFF

1 lb. lean ground beef
1 c. sour cream
1 tsp. soy sauce
3/4 tsp. salt
1/4 c. chopped green onions (use the green part, too. Sometimes I ONLY use the green part).
1 T. milk
1/8 tsp. garlic powder
1 loaf french bread
butter
1 lg. tomato, sliced
1 lg. green pepper, sliced into rings
4-8 oz. shredded cheese (any kind you like)

1. Slice french bread in half lengthwise. Butter both halves. Wrap in foil. Bake at 375 degrees F, for 10-15 minutes.

2. Meanwhile, brown ground beef with green onions, salt, and garlic powder. Drain grease. Stir in sour cream and soy sauce. Heat, but DO NOT BOIL.

3. Spread meat mixture on both halves of french bread. Top with green pepper rings and tomato slices. Sprinkle on shredded cheese.

4. Place on cookie sheet and bake for 5-10 minutes longer to melt cheese. To brown the cheese, you can turn on the broiler for a few minutes, but watch it closely so it does not burn.

Easy Ground Beef Casserole with Potatoes
From Diana Rattray,
1 to 1 1/2 pounds lean ground beef, browned
1/2 cup chopped onion
salt and pepper
3 large potatoes, sliced
2 Carrots, shredded
1 can cream of mushroom soup
1 cup shredded Cheddar cheese

Brown ground beef in a skillet with chopped onions; cook until onions are tender. Drain off excess fat; transfer ground beef and onion to casserole dish. Add layer of sliced raw potatoes, sprinkle with salt and pepper; shred carrots to cover potatoes.
Put soup over carrots. Bake at 350° for 40 to 50 minutes, or until potatoes are tender. Sprinkle shredded cheese over top and bake for about 5 minutes longer, or until cheese is melted.
This easy ground beef and potato casserole serves 4 to 6

If you have a crockpot, the easiest thing I know would be to put chicken legs in (a whole, cut -up chicken would work, too) and put BBQ sauce on top. Cook on low for 8 hrs. You could make a tossed salad with that, and maybe toast some garlic bread.

It's a spinach quiche and it's really easy! Well, more like a frittata because it doesn't have a crust.

This one uses Kraft macaroni and cheese dinner and adds ground beef to it before you bake it in the oven. My dad makes this when my mom is out of town and if he can do it, so can you!

If you google "easy meal recipes" you will get lots of websites. One of my fave easy dinners is to fry up some ground beef or ground turkey (I usually add some already frozen and chopped onions and peppers to that cuz they cook faster that way) and then dump that in the crockpot along with one can (I buy the cheap Hunts or store brand in a can not a jar for this purpose) of spaghetti sauce and a box of beef stock. Then I sometimes cut a potato into small chunks and cut some baby carrots as well - and celery if you wish. Then I dump in a bag of frozen vegetable medley and usually a can or two of beans (black and northern are my fave - be sure to strain and rinse them first). At the end of the day I make either barley or noodles and add those before serving. This is quick and easy and make a bunch either for leftovers or freezing for another meal. I have a family of 4 and we always have leftovers (but I usually use 2 boxes of beef stock). It's pretty much a "add whatever sounds good" kind of meal but makes a yummy minestrone. If you are looking for something that makes a nice presentation for guests - Cook up about 12 oz of rotini - al dente - still a bit chewy - fry up a pound of ground beef and add a jar of spaghetti sauce - mix sauce, beef, cooked noodles and a few handfuls of mozzerella cheese together and bake at 350 for about 30 minutes. Serve with fresh italian bread and butter and a nice salad on the side.

cheesy ham and noodles...boil noodles and during the last few min of cooking time, add frozen peas or broccoli to the boiling water and let them cook in the same pot (or buy the steamable bags of vegies and cook)-drain. Cube one pkg of cream cheese and stir into the hot pasta/veg mixture until melted and coating the pasta. Buy a chunk of deli ham and dice or prediced ham and add...voila, you are done.

Mac-n-cheese with add ins...make some mac-n-cheese and add various things to make it yummy...tuna, hamburger and canned tomatoes, salsa & black beans, chopped pepperonis&canned mushrooms. The options are endless

Hot ham and cheese...spread a halved roll with mustard of your choice on one side and mayo on the other. Fill with deli ham and swiss cheese. Wrap in foil and place in a 350degree oven for 15min or until melted. Eat with your favorite can of soup.

frzn meatballs and pasta...In a crock pot combine 1can french onion soup and 1can cream of mushroom. Stir in a bag of Frozen Italian Style meatballs and cook on low for 6-8 hrs. Serve over cooked egg noodles.

Crock pots are the best for people who can't cook:) Throw the stuff in and leave it all day and it comes out great! Get a crock pot cookbook or look up some recipes!!!

Polish Sausage with potatoes and cabbage...cut cabbage into wedges and wash up some small potatoes or halve larger potatoes. Cut sausage into serving size pieces. Put everything into a pot, season with salt and add water to cover. Bring to a boil and turn down heat to simmer until potatoes are tender.
