		<description>I like to try to sear my meat right in the pan I&#039;m gonna cook it in.  That way I already have all the yummy bits that are in the pan from searing in there...without needing to work at getting them loosened up and moved to the new pan.  If you don&#039;t have a pan that can go from the stovetop to the oven that is big enough for your intended end product...then I always love a nice big Cast Iron Skillet.  I have an endless collection of pots and pans...but nothing beats a good old fashioned Cast Iron Skillet like my grammy used to do her cooking in.</description>

		<description>If I&#039;m roasting the meat, I use the roasting pan to sear it.  You need a good quality, heavy roasting pan to do this.  Otherwise, any heavy dutch oven or even a large cast iron frying pan would work.</description>

		<description>the same pan or pot you are roasting it in. I suggest and only use cast iron myself. by using the pot or pan to sear that you are roasting in you have only one to wash not two.</description>
