We all have our favorites - I sold restaurant equipment for 17 years. I use Wustoff and Henckel knives, but my husband likes the razor sharp Japanese Global. My husband likes All Clad stainless while I like cobalt blue Le Creuset and Caphalon anodized. I buy all my sheet pans, muffin tins etc from the commercial wholesalers because they are made for abuse and last forever. Vollrath makes lots of aluminum cookware but it is pretty huge and ugly for home use.
