try this web site they give you the recipes a menu to guide you and the shopping list too boot. I love it! www.savingdinner.com they give you several menus one is for people on a budget and they have others from crock pot to freezer dinners and even menus to help you loose weight and the food is soooo good. What I love most is that the lady who puts it all together is a nutritionist so you know its healthy!

As long as you strain and rinse the meat it's hard to find anything better for you than chili...short of boiled chicken and green beans

So cute! What a great opportunity to bond and be healthy- Go Mom!! I like making pizza using a whole wheat crust- or whole wheat pitta bread. Fruit smoothies are also a great way to meet those fruit requirements. Veggie dippers w/ a healthy dip that she can mix would encourage some veggie eating.... I love cooks.com, great dessert ideas and tons of healthy options!
Happy cooking ladies

So I don't have kids and I know that they can be somewhat picky when it comes to eating certain foods, but here are some options:

-Stir Fry: chop up a bunch of veggies and stir-fry them with the sauce of your choice (I prefer soy and teryaki sauces). Add some cubed, cooked chicken and maybe some rice. If you're really piched for time you can always use the frozen, bagged stir-fry veggies from the grocery store. Really easy and healthy.

-Egg Omlettes: cook up some eggs and cheese, only takes a few minutes from start to finish and has lots of protein! For an even healthier option you can use egg whites or the pre-packaged egg beaters, which have less calories than regular eggs.

Hope those ideas help!
