1 1/2 pounds fish fillets
1 shallot — finely chopped
5 tablespoons white wine
5 tablespoons fish stock — or clam juice
1/4 cup butter — cut into 6 pieces
1/2 cup whipping cream
salt and pepper — to taste
Preheat oven to 350 degrees F. Grease a shallow baking dish.
Reserve 8 asparagus for garnish. Chop remaining spears.
Lay fish fillets, skinned side up, on a board. Divide chopped asparagus among fillets; roll to enclose asparagus.
Sprinkle greased baking dish with shallot; arrange rolled fillets in dish. Pour white wine and fish stock. Cover with foil; bake in oven 10 minutes. Cool 30 minutes. Lay 2 reserved asparagus spears on each rolled fillet. Freeze.
To Serve: Thaw wrapped fillets in refrigerator 6 to 8 hours. Preheat oven to 350 degrees F. Bake fish 10 minutes. Drain liquid into saucepan; boil to reduce liquid by 1/2. Beat in butter, a pieces at a time. Beat until each piece of butter is incorporated before adding more butter. Whip cream lightly; fold into sauce. Season with salt and pepper, Pour seasoned sauce over fish. brown top of dish under a preheated broiler, if desired, Serve with mashed potatoes and green beans. Serves 4.

6 pounds (6 to 8-pound) fully cooked bone-in ham
Whole cloves — if desired
1/4 cup honey
1/2 teaspoon ground mustard (dry)
1/4 teaspoon ground cloves
Heat oven to 325º. Place ham, fat side up, on rack in shallow roasting pan. Insert meat thermometer so tip is in thickest part of ham and does not touch bone or rest in fat. Cover ham and bake 13 to 17 minutes per pound or until thermometer reads 135º: 6-pound ham, 1 hour 18 minutes to 1 hour 42 minutes; 7-pound ham, 1 hour 31 minutes to 2 hours; 8-pound ham, 1 hour 44 minutes to 2 hours 16 minutes.
About 20 minutes before ham is done, remove from oven. Pour drippings from pan. Remove any skin from ham. Cut uniform diamond shapes on fat surface of ham. Insert clove in each diamond. Mix honey, mustard and cloves; brush over ham. Bake uncovered 20 minutes.
Cover ham loosely with aluminum foil tent and let stand about 10 minutes or until thermometer reads 140º.
