Slow Cooking
I come from a long line of cooks and our kitchens have always been a place for us to express our creativity. Both women and men in my family cook and often teased each other about who was the best cook (no doubt it was my mother). My brother had a cooking show on one of the LANs years ago and the family Bar-B-Que recipe is still one of our favorites. However, I am the only one who has that secret recipe as my mother says to me.a My father, grandfather, my mother and my grandmother each had a different bar-B-Que recipe, but it was my mother who was the favorite at all picnics and family gatherings. At church, I inherited my Family’s love of culinary adventure, but not as much talent!
So, you know Whenever a new gadget or something comes on the market that will send me to the kitchen, my husband knows I’m going to it. I have a few gadgets preferred, but like my crock pot, which is great to have dinner, if we want to be left for the day, and food processor. These things I can not do without when it comes to quick, easy preparation and casseroles.
The first slow cooker, and Originally known as the Crock-Pot has been around since the early 1970 s. In 1991, the cooker had generated over 30 billion dollars in sales. Believe it or not, I still have my original mother bought at the time. She has participated in many roast dinners Sunday with all trimmings. Slow cooking made more difficult cuts of meat falling-off-the-bone tender and the added flavor of the vegetable juice in the pan. Slow cookers weren’t very attractive at the time, and have evolved over the years. My mother’ s famous chicken and dumplings were cooked in the crock pot is old and that the dish she has taken every dinner at the church across the world!
We have since upgraded to a larger crock pot with lid locks and handles. My husband’s favorite dinner is cooked slowly with roast potatoes, carrots and gravy. Mine is a chicken dish. In the morning I put two chicken breasts without skin in the casserole, add one cup of rice, water cooking (amount of water depends on what type of rice you use “white, brown or basmati” our favorite) and add a jar of Seeds of Change Tikka Masala curry sauce on top, cook all day and it is ready when we get back to chicken and work.A rice absorb all the flavors and is delicious! Â Serve with green salad and you have a full meal, healthy and delicious!
I couldn’ t begin to tell you how my mother made her chickens and dumplings. We have never been able to reproduce this recipe. She just had that special Loving Touch and of course, a secret to his incredible dumplings. The great thing about a slow cooker is that you can cook almost any meat dishes, pasta dishes, desserts and bread. It also saves on your electricity and keeps the summer heat of the kitchen as you don’t have to turn the oven for a few hours cook. And believe me, living in a hot and humid like us, which is worth in itself!
