      @tally24th You are right! My mother uses a bowl of water and maybe 1 teaspoon of salt to soak peeled and cut fruit for a minute or so. The cut fruits (esp. apples) stay pretty for hours. It’s great way to prepare your kid’s lunch box and a party tray, too.

      This works for eggplant too. I dehydrate my eggplant when I get a big harvest from the garden and squeezing lime juice over them before placing them in the dehydrator makes they dry at their original color.

      This really works. The citric acid prevents the oxidation from occurring.

      Hi ladies!

      I have some granular citric acid on hand that I bought at the Indian grocery store for use in a chaat recipe a while back, and I wonder if I could sprinkle some of that on, so that the fruit will be preserved, but without a particularly lemony taste?

      Pineapple juice and other citruses work well too.
      You can also..
      -Dissolve 2 or 3 crushed Vitamin C pill in a bowl of cold water the night before or an hour before in a fridge.
      -Keep ripe apples and any parts of a fruit that seem to be bad or squashed, away from other fruits

      You can dissolve the citric acid in some water and use it otherwise it will make your fruit really really sour.

      I thought it had to do with the acid in the lemon juice that keeps the apple from oxidizing… not the sourness.. hmm?

      Well, theoretically it is the citric acid that keeps the fruit from oxidizing however green apples tend to stay fresh looking for a whole day without any help.
