Guests joined Chef Eyvind Hellstrøm as he presented a salmon dish, accompanied with a spinach sabayon. Naming the dish Salmon at 55˚C, Chef Eyvind utilised the heat from a pan of hot olive oil to gently cook the fish, without any added heat.
