Easy Meals to Make for a Family?

I’ve recently run into a situation where the person who usually cooks in my home cannot. I’d like to help out as much as possible and have only basic knowledge in the kitchen, so if you could give me some really easy recipes for some dinners, it would be greatly appreciated! Soups, pastas, casseroles, good ideas using chicken, anything!

    I have a really good recipe.

    Brown 1 lb of burger
    Add 1 onion chopped
    drain grease
    Add taco seasoning
    Add 5 slices of Velveeta Cheese
    2 cans of Campbells tomato soup
    salt and pepper
    wrap it up in a shell and you got gourmet tacos.

    I robbed the Old chi chi’s recipe before they closed down.
    Just use name brands, it counts.

    Go to kraft.com and cambles.com They have cheap and easy meals. And they look and taste like you spent all day on them. When in reality only 30 min :)

    Enchilada Casserole

    Prep: 15 min – Ready In: 50 min

    1 pound lean ground beef
    1 cup (1 small) chopped onion
    2 cloves garlic, finely chopped
    2 1/2 cups (two 10-ounce cans) ORTEGA Enchilada Sauce with Green Chiles & Onion
    1/2 cup (2 1/4-ounce can) sliced ripe olives, divided
    10 (6-inch) corn tortillas, cut in half, divided
    2 cups (8 ounces) shredded cheddar cheese, divided
    Sliced green onions (optional)

    PREHEAT oven to 375� F. Grease bottom of 9-inch-square baking dish.

    COMBINE beef, onion and garlic in large skillet. Cook over medium-high heat, stirring occasionally, for 4 to 5 minutes or until beef is no longer pink.

    STIR in enchilada sauce and 1/4 cup olives. Bring to a boil. Reduce heat to low; cover. Cook, stirring occasionally, for 5 to 8 minutes.

    LAYER half of tortillas on bottom of prepared baking dish. Cover with half of beef mixture; sprinkle with 1 cup cheese. Repeat layers; cover.

    BAKE for 20 minutes. Uncover; bake for additional 5 minutes or until bubbly and cheese is melted. Sprinkle with remaining olives and green onions.

    Makes 8 servings

    Tuna Noodle Casserole

    1 can (10 3/4 oz.) Campbell’s Cream of Mushroom or 98% Fat Free Cream of Mushroom Soup
    1/2 cup milk
    2 tbsp chopped pimiento (optional)
    1 cup cooked peas
    2 cans (about 6 oz. each) tuna, drained and flaked
    2 cups hot cooked medium egg noodles
    2 tbsp dry bread crumbs
    1 tbsp margarine, melted

    Mix soup, milk, pimiento, peas, tuna and noodles in 1 1/2-qt. casserole. Bake at 400 F for 20 min. or until hot. Stir.

    Mix bread crumbs with margarine and sprinkle on top. Bake 5 min.

    Makes 4 servings

    Impossibly Easy Bacon Pie

    Indulge yourself with an old-fashioned bacon-and-egg breakfast with this easy pie recipe.

    Prep: 20 min – Bake: 40 min – Cool: 5 min

    12 slices bacon, crisply cooked and crumbled
    1 cup shredded natural Swiss cheese (4 ounces)
    1/3 cup chopped onions
    1/2 cup Original Bisquick®
    1 cup milk
    1/8 teaspoon pepper
    2 eggs

    1. Heat oven to 400�F. Grease 9-inch pie plate. Sprinkle bacon, cheese and onion in pie plate.

    2. Stir remaining ingredients until blended. Pour into pie plate.

    3. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

    Makes 6 servings

    Chicken and Cheese Casserole

    Get the flavor of chicken pot pie in an easy casserole! Tender, flaky biscuits make the perfect topping for tasty chicken, vegetables and cheese.

    Prep: 12 min – Bake: 25 min

    2 cups cut-up cooked chicken
    1 can (11 ounces) whole kernel corn with red and green peppers, drained
    1 can (10 3/4 ounces) condensed cream of chicken soup
    2 cups shredded Monterey Jack cheese (8 ounces)
    2 1/4 cups Original Bisquick®
    2/3 cup milk

    1. Heat oven to 375�F. Mix chicken, corn, soup and cheese in square baking dish, 8x8x2 inches.

    2. Mix Bisquick and milk until soft dough forms. Turn dough onto surface dusted with Bisquick. Knead 10 times. Roll 1/2 inch thick. Cut with 2 1/2-inch cutter. Place biscuits on chicken mixture.

    3. Bake 20 to 25 minutes or until biscuits are golden brown.

    Makes 6 servings

    Chicken Cacciatore & Pasta

    One can and one pan is all it takes! Swanson® Chicken Broth creates a flavorful simmering sauce that seasons the chicken, vegetables and pasta shells in this complete skillet supper.

    Prep: 10 min – Cook: 30 min

    1 tbsp. vegetable oil
    4 boneless chicken breast halves, skin removed
    1 can (14 oz.) Swanson® Chicken Broth (1 3/4 cups)
    1 tsp. dried oregano leaves, crushed
    1/2 tsp. garlic powder
    1 can (14 oz.) whole peeled tomatoes, cut up
    1 small green pepper, cut into 2" long strips
    1 medium onion, cut into wedges
    2 1/2 cups uncooked medium shell pasta

    HEAT oil in skillet. Add chicken and cook until browned.

    ADD broth, oregano, garlic, tomatoes, pepper and onion. Heat to a boil. Stir in pasta. Cover and cook over low heat 15 min. or until done.

    Chicken-Parmesan Potatoes

    Need an easy one-skillet meal? This one includes family favorites: chicken, potatoes, green beans and cheese.

    Prep: 5 min – Cook: 20 min – Stand: 5 min

    1 package (4.9 ounces) Betty Crocker® au gratin potatoes
    3 cups cut-up cooked chicken or turkey (1 pound)
    2 1/4 cups hot water
    2/3 cup milk
    1 package (9 ounces) Green Giant® frozen cut green beans
    1/2 cup grated Parmesan cheese

    1. Heat Potatoes, Sauce Mix and remaining ingredients except cheese to boiling in 10-inch skillet over high heat, stirring occasionally.

    2. Reduce heat; cover and simmer about 20 minutes, stirring occasionally, until potatoes are tender.

    3. Stir in cheese. Let stand 5 minutes.

    soups are easy, after a meal put any leftover veg into a blender and add a little water and when your ready to eat it heat it up and serve with some ot crispy bread.

    Jacket potatoes and just buy lots of cold meets, salads etc as a filling

    fried veg pasta.. put a load of pepers, onions, sweetcorn and tomatos into a frying pan and add to some cooked pasta.

    Here is an idea for Hot and Sour Chicken Soup

    Ingredients

    750ml chicken stock
    1 stick lemon grass, bruised
    5cm piece of ginger, sliced
    45ml fish sauce
    4 red chillies, finely sliced
    100g shiitake mushrooms
    350g chicken breast, sliced
    Small handful fresh basil
    Small handful fresh coriander
    Small handful spring onions
    Boil your chicken stock in a pot and then add the lemon grass. Then add the following ingredients: ginger, fish sauce, chillies. Cook for around 15 minutes and then strain the liquid.

    Add the mushrooms and chicken breasts after you have brought it back to a boil. Proceed to cook for another 5 minutes and then remove from the heat. Stir in the basil, coriander and spring onions.

    Serve while hot.

    you can google "easy dinner recipes" and you will find a ton of them.

    But here is one our family really likes and it is easy to make…it involves a lot of cutting, but otherwise easy.

    7 layer dinner

    greese a caserole pan
    lightly brown some ground beef
    layer on bottom of caserole dish
    put a layer of sliced potatoes
    thin layer of rice
    corn
    cut up raw carrots
    celery
    you can use any number of other vegetabes and you can substitute beef for port or chchen and you can alternate the order and do multiple layers of any of the foods in the recipe…their is little rules in this meal.
    Next mix one or two cans of tomato soup with half the amount of cold water and pour over the food. Bake for approx 1 – 1 1/2 hrs at 350

    Easy Tuna Casserole

    1 box of Mac & Cheese
    1 Can of condensed Cream of Mushroom Soup
    1 Can or package of Tuna
    Worchestershire sauce to taste — about a couple of tablespoons

    Cook the Mac & Cheese according to package instructions
    Place it in a casserole dish, and stir in the mac & cheese, mushroom soup (do not add water or milk), the tuna, and the Worchestershire sauce.

    If you like, you can top it with crumbled up Ruffles potato chips.

    Bake covered at 350 for 30 minutes. Uncover and bake an additional 5 to 10 minutes until there is a light brown crust. Bon Apetit!

    I HAVE FEW RECIPES FOR U-
    for soup
    Peas Soup
    Ingredients:
    2 Stalks Leek, Chopped
    1 Potato, Peeled and Chopped
    250gms Peas
    100gms Spinach
    1ltr Vegetable Stock
    Salt to taste
    1tbsp Cream
    1tbsp Butter

    For the Garnishing :
    Cucumber, Chopped finely
    Tomato, Chopped finely
    Apple, Chopped finely
    Kiwifruit, Chopped finely
    Olives, Chopped finely
    Heat Butter, add Leek, Potato, Peas and Palak and stir for a minute.

    Add Vegetable stock and let it cook for 5 to 6 minutes. Add Cream, Salt and more Butter.

    Pour in a soup bowl and garnish with bits of Cucumber, Kiwi Fruit, Olives, Apple and Tomato.

    Potato and Pasta Salad
    Ingredients:
    1 cup – bow shaped pasta (boiled)
    1/2 cup – mayonnaise
    1/8 cup – yoghurt
    2 tbsp – olive oil
    1 small tin – chedder cheese, grated
    1 – potato, boiled and diced
    1 tin – yellow corn
    5 – small pickled cucumbers
    a few lettuce leaves, chopped
    3 spring – onions, chopped
    few dashes – tabasco or other chilli sauce
    pepper to taste
    salt to taste

    Method:
    Mix the pasta, cheese, potato, corn, cucumbers, lettuce and onions in a bowl.
    Mix together the other ingredients to make a dressing.
    Then pour over the pasta mixture.
    Refrigerate for at least 15 mins and then serve.

    Vegetable Casserole
    1 (10 oz.) mixed vegetables (frozen)

    1/2 c. chopped celery

    1/2 c. onions

    Cook as directed on package. Do not add salt. Drain well. Add: 2 c. Hellmann’s mayonnaise

    Add:
    1 c. shredded American cheese

    Top with crushed Ritz crackers, 1 sleeve. Microwave 5 minutes.

    chicken ideas-
    Quick, Easy -N- Fast Chicken Fried Steak Recipe

    2 lbs. round steak
    1 1/2 C. flour
    1/4 t. garlic powder
    1/4 t. onion powder
    1/2 t. paprika
    1 t. salt
    1/4 t. black pepper
    1 C. buttermilk
    vegetable oil for frying

    Cut steak into serving size pieces. Tenderize and pound them with a mallet to 1/4 inch thickness.

    Place buttermilk in a shallow dish and set aside.

    Combine flour, garlic powder, onion powder, paprika, salt and pepper. Mix well.

    Dip steaks into flour and shake off excess flour. Dip steaks in buttermilk, coat both sides, allow excess to drip off. Place the steak back into the flour mixture and coat well. Place on a cookie sheet and refrigerate steaks for 15 minutes.

    Heat 1/4 to 1/2 inch oil in a large frying pan. Fry steaks until brown on both sides. Set aside steaks while you make the gravy.

    Gravy
    2 T. reserved pan drippings
    2 T. butter
    1/4 C. flour
    3 C. milk
    salt and pepper to taste

    Heat the drippings and the butter in the frying pan. Stir in the flour and cook for 1 minute. Slowly add milk, stirring constantly. Bring to a boil and reduce heat. Cook until thickened. Season with salt and pepper. Serve ladled over the steak.

    Make hamburger gravy.Its good.Eat it with biscuits or bread. It’s quick and easy too.

    1 1/2 pound ground beef
    1 package onion soup mix
    1 cup water, more if desired
    2 carrots, sliced
    2 tablespoons flour
    1/2 cup water

    Brown ground beef and drain. Add onion soup mix and enough water to give it a "soupy" consistency. Add sliced carrots. Dissolve the flour in 1/2 cup water and mix with whisk (or until there are no lumps). Stir slowly into beef mixture. Stir thoroughly. Should have the consistency of gravy. Serve over potatoes, rice or noodles

    Get your hands on Betty Crocker’s Easy Basics Cookbook OR any Sunset Cookbook…they are usually subject specific, like casseroles, baking, &c.
    Look in your local used book stores or donation stores for used copies of older cookbooks (from the 50′s and 60′s) for those covered dish American specialies.

    Porcupine Balls

    1 egg
    ½ cup water
    1 envelope lipton onion soup mix
    1 ½ lbs lean ground beef
    ½ – ¾ cup uncooked minute rice
    1 – 46 oz bottle of Campbell Tomato Juice
    1 tsp sugar

    Beat egg slightly with water and 2 tbs soup mix. Mix lightly with beef and ¼ cup of rice. Shape into large meatballs (1 ½ to 2 inches). Roll in remaining rice, pressing it lightly into the meatball. Use more rice if needed.

    Heat tomato juice to boiling. Stir in remaining onion soup mix and sugar. Place meatballs in sauce and cover. Simmer, stirring several times for 50 minutes.

    Serving suggestions: Great with a vegetable or salad and rolls.

    Quick Chicken Parmesan

    4 Boneless Chicken Breasts, pounded flat
    1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
    3 oz. Mozzarella Cheese, grated
    2 cups Italian Bread Crumbs
    2 oz. Parmesan Cheese
    1/2 tsp garlic salt
    1 egg, plus 1 tbs water, slightly beaten

    Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

    Serving Suggestions:

    I serve this with Fettuccini Alfredo and garlic bread.

    Creamy Fettuccini Alfredo

    1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
    ¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
    ½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
    ½ cup milk or half and half (I use 1% or 2% low fat)
    8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

    In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.
    Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.

    Don Joses’s Beef, Shrimp, or Chicken Fajitas

    Marinade:
    1 clove garlic, minced
    2 tbs corn oil
    1 tbs lemon or lime juice
    1 tbs Worcestershire sauce
    dash of salt and pepper

    4-5 boneless chicken breasts, cut in strips, 2 lbs beef sirloin cut in strips or 1 ½ lbs of
    shrimp, shelled and de-veined
    1 tbs corn oil 1 large onion, sliced
    1 green bell pepper, thinly sliced
    1 red or yellow bell pepper, thinly sliced
    12 small flour tortillas, heated

    Combine all ingredients in the marinade together in a plastic container or zip lock bag, mix. Add chicken to coat. Marinade for at least 15 minutes, turning several times. Add oil to large skillet and heat on medium-high. Add chicken and sauté until brown. Add onion and bell pepper and sauté until cooked but slightly crisp. Serve on tortillas. Garnish with sour cream and shredded Cheddar or Jack cheese.

    Mushroom Chicken

    4 boneless or bone-in chicken breasts
    1 can cream of mushroom soup
    1-8 oz container of sour cream (regular or light)
    2/3 cup sherry
    1 cup sliced mushrooms (optional)
    1 tsp garlic salt
    pepper to taste

    Mix together everything but the chicken in a bowl. Pour half or the sauce in a casserole dish. Add chicken breasts and top with remaining sauce. Bake at 350F for 1 hour.

    Serving suggestions: Mashed potatoes with sauce as gravy or red potatoes, vegetable, and Hawaiian rolls. Can be made in crock pot. Add sauce to the pot then add the chicken, coat with remainder of sauce. Cook on low for 3-4 hours.
