Because the are more far removed from 'the line' and daily interaction with the food, people they work with or who work for them etc. They are busy traveling to cooking and wine shows, selling books, judging, etc. The lesser known chefs are probably actively working in their restaurant and still have that 'clicking of the mind' needed under pressure. Rick Bayless has won the James Beard award, and he kicked butt!

I'm surprised you haven't figured out that those shows are fixed.

Similar to all the shows on the Food Network, the "competitions" are staged and there to give attention to the new chefs. This is marketing at its best. Sometimes they'll pair up restaurants against the famous chef and the restaurant always wins. Why? It's a talent showcase, not another pat on the back for those already famous.

It's usually clear that the famous chefs either screw up on purpose or the judges just rule out of their favor.

Some are surprising - like Besh. I figured he would have done well, having competed in the show to become an Iron Chef.

But others admit it's literally been years since they've had to go to market to pick out food, or have to do their own prep.

I think they were all taken by surprise at how difficult the competition was.

There were also those who just had a bad day. It happens, but when you're in a competition, you can't afford that.

If anything, it's been interesting to watch real "masters" at work.
