Difficult cooking methods/techniques?

Hello, Im a college student (not in culinary school) who enjoys his cooking. While no professional, I am quite experienced with baking, frying and a wide variety of basic cooking, however, I’m looking for something more difficult, something that is tough to do, easy to screw up. What im looking for is a recipe for an actual dish, not just a sauce to put something on top of it, and preferably something that could be used as a main course.

Thanks a ton! Also, I am currently working on trying to make a (I know, it sounds weird) ginger sauce to make the turkey that my mother is undoubtedly going to cook to the point of being EXTREMELY dry a bit… better this year. any ideas? I like the idea of a sweet sauce, and I didn’t really want to use fruit, so I was thinking an asian ginger type of sauce. any suggestions?
