@roughtimescooking I usually use unbleached white flour for corn bread. I have used whole wheat, the texture wasn’t what I wanted… have to get Brian to let me try some of his!
@crystalflaiz About baking powder, it doesn’t keep all that well, better to buy smaller quantities. Old baking soda can sometimes be helped by using double the recipe amount and adding 1/2 tsp. or so of baking soda… my mom would sour some milk with a little vinegar to help her quick breads to rise.

as for the organic milk issue, i am absolutely behind you. it’s disgusting how the little people who want to do what they believe is right get abused by the big corporations. but one day this will all change, i am sure of it!

@roughtimescooking I actually prefer soft whole wheat flour in my banana bread. That said, if picky eaters used to processed food happen to visit, I’ll use half unbleached white flour to make the texture more familiar to them… most people don’t know the difference, however.
What?! No ORGANIC MILK! That is just wrong. We’re lactose intolerant in this house, but if you drink milk and chose organic that should be your choice.
@mtbluzman Willi’s actually in New Brunswick. There’s lots of organic milk in Ontario, where I live. I think her point was that you can’t buy direct from a farmer, who’s practices you know. Instead, it’s a controlled industry and you’re forced to buy it where everyone else does.
