    Hi again otoncin,
    As mentioned before I am not an expert on freezing food as most of the food I make is eaten fresh.
    However as far as I understand you can freeze sausage rolls. From what I have read, it appears that freezing them before cooking or adding the egg glaze is the best way otherwise they will loose their crunchiness.

    I finally managed to make these (pesto , cranberry, plain) and the kids loved them. The only thing was that the pesto ones turned out very dry so I don’t think I’ll do those again. The cranberry ones were ridiculously good.

    The sausages are Not ready cooked.
    Use a sausage you like to eat, your favourite ones.
    Maybe pork sausages.

    I like that idea!
    I quite like black sausage. I had a quick look and could not easily find “black or white UIrish Clonakilty pudding” I may have to source from a speciality shop.
    I can find some other black sausage.
    I will do a bit of searching and next time I make the rolls, I will give it a try.

    Ground pork, homemade bread crumbs, an egg, salt & pepper, chopped sage, margorum, makes a great stuffing.

    I use the british oxford banger recipe. I make bangers a lot at home, you can not buy them here in the states. But a sausage roll works best for entertaining.

    My hubby is from Scotland, for years he searched for them. There is a company that makes what they call an Irish Banger, but it just doesn’t come close. I cut the fat off a port butt and grind my own meat and I don’t add the port fat, this has reduced his cholesterol….LOL. Thank you for the tips on how to make sausage rolls, I am going to make them for a Christmas party, I will let you know how it went with the guest.
