In this video, Betty demonstrates how to make beautiful and tasty Baked Potato Fans. These are whole baking potatoes that have been peeled and cut into slices (almost to the bottom), then drizzled with butter, sprinkled with salt, topped with a glorious blend of herbs and cheeses and baked in the oven. They make a great accompaniment to almost any meal! Note: I made just 2 of these potatoes for demonstration purposes, but you can increase or decrease the amounts as needed. Ingredients: 2 medium baking potatoes ½ teaspoon salt 1 ½ tablespoons butter or margarine, melted 1 tablespoon of chopped fresh herbs (I used parsley, chives, thyme, and sage. You may use any or all of these. If you used dried herbs, use only 1 teaspoon altogether.) 2 tablespoons finely shredded sharp Cheddar cheese 1 tablespoon finely grated Romano or Parmesan cheese (I use Italian Peccorino Romano cheese.) cooking oil spray Wash and peel potatoes. Keep covered with water until ready to use. When ready to assemble recipe, dry the potatoes with a paper towel. Cut potatoes into thin slices, but not all the way through. Use the handle of a spoon to prevent knife from cutting all the way. Put potatoes in a baking dish that has been sprayed with cooking oil. Fan the potatoes slightly. Sprinkle with salt and drizzle with butter or margarine. Sprinkle with herbs. Bake potatoes at 425 degrees for about 50 minutes. Remove from oven and sprinkle with cheeses. In this video, Betty demonstrates how to make baked flour tortilla cups. These are crisp cups that can be used for serving appetizers, side dishes, main courses, or desserts—they make an elegant presentation and can be eaten along with their filling! 6 small flour tortillas (6 ½ inches across) cooking oil spray approximately 2 tablespoons extra virgin olive oil (You may use melted butter, if you prefer.) You will need a muffin tin for 6 large muffins (each 3 ½ inches across and 2 inches deep). Spray each muffin tin with cooking oil spray. Take each individual flour tortilla and put a sizable fold in it, transforming it into a cone shape. Place each cone-shaped tortilla in the prepared muffin tin. Use a pastry brush to put a thin coating of olive oil inside and around the top of each cone. (You may make as few or as many tortilla cups as you like. If necessary, use more than one muffin tin, or keep repeating the process with the same muffin tin.) After your flour tortilla cones are coated with oil, bake them in a 350 degree oven for 10 minutes, until they are brown and crisp. You may use the cups to serve dips (cream cheese, mayonnaise, or sour-cream-based), salads (tuna, chicken, ham—even tossed green salad), side dishes (drained, cooked vegetables, rice, refried beans, macaroni and cheese, etc.), desserts (fruits like strawberries, blueberries, kiwi, bananas—or a mixture of fruits)—or even scoops of ice cream or puddings, and many other types of food. RECIPE FOR BAGELS from the book “How To Be A Domestic Goddess” ————————– 1 kg of white flour, plus more as necessary for kneading 1 tablespoon of salt 7grams of easy yeast or 15grams of fresh yeast 2 tablespoons of sugar 1 tablespoon vegetable oil, plus more for greasing 500mL warm water, plus more as needed 2 tablespoon of malt or sugar, for poaching the bagels 2-3 baking sheets, oiled or greased Sesame seeds, poppyseeds or finely diced onion optional ————————– 1. Combine the flour, salt and yeast together in a large bowl, add the sugar and the oil to the water. Make a well in the dry ingredients and add the liquid, mixing to a dough with a spatula or wooden spoon. 2. Knead the dough either by hand or with dough hook, trying to add more flour if you can, dough is better drier than wetter, the dough will be stiff and hard work, even with the dough hook it takes 10 minutes. 3. Form the dough into a ball and put it into an oiled bowl, turning once to coat all around, then cover the bowl with clingfilm and leave it to rise for 1 hour. It should be well risen, and when you poke it with your finger , the impression should remain. 4. Punch the dough down and then give a good knead and divide into 3 pieces. FOREWARNING: This reaction pretty hard to get exactly right, don’t be discouraged if it fails the first time. Thoroughly read the comments and this description to avoid problems. Finally, if it still doesn’t work, message me and i’ll try to help. Just get 1 liter of clear vinegar and add in 4 to 5 table spoons of baking soda. Then boil the mixture down to 100mL to 150mL. If it does not, add an equal amount of vinegar and boil it back down. Smelling again for the vinegar. Keep adding and boiling until it does smell like vinegar. In this video, Betty demonstrates how to make Oven-Baked Parmesan Potatoes. If you are tired of repeating the same kind of potatoes with your meals, this is a different look and taste for potatoes that you will like! Ingredients: 3 large baking potatoes (I used Russet potatoes.) ¼ cup butter, melted 1 cup finely shredded Parmesan cheese ½ cup chopped green bell pepper 1/3 cup chopped onion ½ teaspoon seasoned salt ½ teaspoon seasoned pepper ¼ teaspoon garlic powder Peel 3 large baking potatoes, and cut them into cubes or wedges, about ¾-inch on a side. Place them in a medium mixing bowl. Add ¼ cup melted butter, 1 cup finely shredded Parmesan cheese, ½ cup chopped green pepper, 1/3 cup chopped onion, ½ teaspoon seasoned salt, ½ teaspoon seasoned pepper, and ¼ teaspoon garlic powder. Stir all ingredients, until potatoes are completely coated. Place coated potatoes in a medium casserole dish with a lid (or cover with aluminum foil) and bake at 350 degrees for about 40 minutes, covered. Then remove the lid (or foil) and bake 10 minutes longer. Finally, turn your oven to broil for 3 minutes to brown the potatoes on top. In this video, Betty demonstrates how to make No-Bake Chocolate Oatmeal Cookie Squares. This was a special request from her son-in-law, Chris, who preferred these cookies to the traditional birthday cake for his birthday celebration! They are dark chocolate flavor, and contain peanut butter and oatmeal, making them more nutritious than the average cookie. Ingredients: ½ cup milk ¼ cup butter or margarine, melted ½ cup cocoa 2 cups sugar 1 teaspoon vanilla extract ½ cup smooth or chunky peanut butter 2 ½ cups quick-cooking oats Place ½ cup milk, ¼ cup melted butter or margarine, ½ cup cocoa, and 2 cups sugar into a saucepan and bring to a boil over medium heat, stirring to dissolve sugar. Boil for 1 minute, stirring constantly. Remove from heat, and stir in 1 teaspoon vanilla extract, ½ cup peanut butter, and 2 ½ cups quick-cooking oats. You may finish these cookies up in a couple of ways. 1) Drop by teaspoonfuls onto waxed paper, and let set up for about ½ hour or 2) Pour mixture into a large (13-inch by 9-inch by 2-inch) greased pan and cool, then cut into equally-sized squares. This is a traditional cookie recipe in my part of the country. These cookies are great as snacks for children, and are great as lunchbox items, but big kids like them, too!
