Check out this cookbook that uses only 4-5 ingredients per meal. Do you have a slow-cooker? We always get at least two meals from those done that way.

The old standby, Betty Crocker, and school PTA cookbooks, too, Trading recipes with your friends may also suit your needs.

Simply put, the evening meal is quickest and easiest for all by preparing a meat/poultry/fish, with a veggie, and starch (potato, rice, pasta), and side salad of either strips of raw carrot, celery, brocolli, etc. and fruit, or a tossed salad with EVOO and juice whipped into that. Equal sizes of each food group is the key, and anyone can learn to braise a pork chop, hamburger, fish fillet, etc. and the rest is more than simple. Don't forget, too, beans and corn breads, lentil soups with fresh hot bread and a side salad.

Enjoy your meals together - always.

This is not a cook book - BUT try the site below. There are lots of tasty recipes for budget meal planning. Plus, for most of the main meals, there are clever leftover meals. This saves time, money and your sanity. Everything is cooked from scratch and there are lots of "slow cooked" meals - ground beef, chuck, chicken and also fish. Nice vegetarian ideas too. The net is a great source of inspiration and you are not tied to one book.

Having said this, there is "The Kitchen Revolution" by Rosie Sykes, Polly Russell and Zoe Heron
"Economy Gastronomy" by Allegra McEvedy
Tasamin Day Lewis has a new budget cook book out, and so does Delia Smith.

The book is broken into three sections: dishes that can be prepared in about 10 minutes, 20 minutes, and 30 minutes. Most recipes just use a handful of ingredients but the flavors are a fabulous blend. There is certainly a healthful bent; add a green salad to each dish and you'd have a balanced meal. We are a bit snooty about our cooking and eating and over the last several months have become firm devotees. Amazon.com may have it in paperback (it's oversized) and perhaps used copies, as well. Bon appetito!
